Here, season after season, every starter and main course features sustainable cuisine and the mastery of the art of seasoning. This gourmet restaurant is ideally located at the Hôtel Hermitage Monte-Carlo.

Michelin-starred cuisine and a whole new concept

With a star in the prestigious Michelin Guide, the Vistamar* offers an original gourmet concept that captures the quintessence of wellness cuisine in all its delicious variations. Chef Benoît Witz prepares gourmet dishes that reflect seasonal hues. Authentic, healthy, and entirely dedicated to regional vegetables, the menu is inspired by the chef’s motto: “living well, looking good”. The light and refined cuisine offers a subtle blend of wellness and gastronomy.

Chic & intimate

Pure lines, light tones and a modern decor offer a chic and intimate setting to this cosy place. Filled with natural light, the restaurant was designed as an open space overlooking the Mediterranean. The Vistamar* offers the chance to have lunch or dinner on one of the most beautiful terraces in Monaco, with a superb view of the port and the Rock.

This chef knows how to follow through

In the 1980s, he was a commis at Paul Bocuse and joined the opening kitchen brigade at the restaurant Le Louis XV in 1987 alongside Alain Ducasse. In 2016, he became Executive Chef des Cuisines at the Hôtel Hermitage. Devoted to the cuisine of the Riviera, Benoît Witz excels in the complex art of keeping things simple.
