Hôtel Hermitage yule logsTo celebrate the year-end holidays and pay tribute to Monte-Carlo SBM values on the special occasion of its 150th anniversary, Pastry Chef Nicolas Baygourry of the Hôtel Hermitage Monte-Carlo – supported by Michelin-starred Chef Joël Garault – has designed and carried out this new creation.


The Monte-Carlo SBM 150-year Anniversary Yule Log’s original design is a true dedication to tradition and modernity: a chocolate cake with sleek lines under a golden velvet coat, all in Monte-Carlo SBM’s anniversary colours. This new creation brings to the limelight the season’s authentic local flavours, a perfect combination of textures and a waft of Christmas, Riviera-style.


The base consists of a biscuit made of Piémont grilled hazelnuts, on which is placed a layer of crispy praline with Menton lemon zest, which has a delicately refreshing scent. In the middle is Menton lemon cream combined with light Tahitian vanilla mousse and a bouquet of Menton mandarin orange. Finally, a shimmering velvet macaroon with gold leaf coats the log, sprinkled with the magic of Monte-Carlo SBM’s 150-year anniversary.
